How to Serve a Brunch that is Diabetic Friendly but Tasty for All
It is easy to plan and serve a brunch that includes diabetics. These recipes allow you to serve a tasty brunch that is diabetic friendly yet most will never know these foods aren't the normal run of the mill. Examples are: Pineapple-Orange Delight, a light, refreshing dessert or salad that will please all; Easy Cheesy Asparagus, a delightful vegetable ready in minutes; a delightful Strawberry Bread; and an Impossible Bacon Cheese Quiche. So the next time you serve a brunch, include some or all of these recipes and let yourself or your diabetic family members or friends join right in.
PINEAPPLE-ORANGE DELIGHT
2 cups low-fat cottage cheese
2 cups unsweetened crushed pineapple, well drained*
1 pkg (.3-oz) sugar-free orange gelatin
2 cups sugar-free frozen whipped topping, thawed
In a medium to large bowl, gently fold the cottage cheese, crushed pineapple, and dry gelatin mix into the whipped topping. Cover and refrigerate until thoroughly chilled. Spoon into dessert dishes. Garnish with a fresh strawberry and a mint spring, if desired.
EASY CHEESY ASPARAGUS
1 lb trimmed asparagus
1 tbsp olive oil
1/4 tsp salt
1/4 tsp pepper
1/3 cup grated Parmesan cheese
lemon zest, optional
In a shallow bowl combine the olive oil, salt, and pepper. Toss the asparagus in the mixture to coat. Spread the asparagus in a layer on a baking pan and sprinkle with the Parmesan cheese. Roast at 425 degrees for around 10 minutes or until tender. Sprinkle with some lemon zest before serving, if desired.
STRAWBERRY BREAD
1 pkgs (10-oz each) frozen unsweetened strawberries
4 eggs
1 1/2 cups oil
3 cups flour
1 tsp baking soda
1 tsp salt
3 tsp cinnamon
1 1/2 cups Splenda granular
1/2 cup sugar
1 cup chopped pecans
Thaw strawberries but do not drain.
Preheat oven to 350 degrees.
In a large mixing bowl, mix together the strawberries, eggs, and oil. Sift the flour, baking soda, salt, and cinnamon into the strawberry mixture. Add the sugar and and stir to thoroughly blend. Stir in the pecans. Pour batter evenly into 2 greased and very lightly floured 9 x 5-inch loaf pans. Bake in a 350 degree oven for 1 hour. Cool completely before removing from pans.
NOTE: This recipe contains a small amount of sugar. If you absolutely cannot tolerate this, replace the sugar with splenda and increase the oil by a tablespoon. The small amount of sugar should not be a problem for the average diabetic who has only a slice or two of this bread.
IMPOSSIBLE BACON CHEESE QUICHE
6 slices bacon, fried, broken into pieces
1 pkg. (8-oz) shredded Cheddar cheese
1/4 cup chopped onion
1 cup milk
1 cup half & half cream
1/2 cup Biscuit baking mix
1/4 tsp pepper
1/4 tsp salt
4 eggs
Preheat oven to 350 degrees.
Spray a 9 or 10-inch deep dish pie plate with nonstick cooking spray. Layer the bacon pieces, then cheese, then onion in the bottom of pan. In a blender container add the milk, half & half, biscuit mix, pepper, salt, and eggs. Blend for 1 minute to mix well. Pour over the ingredients in the pie plate. Bake at 350 degrees for 40 to 45 minutes or until golden brown.
